King’s new menu reflects a passion for simple and fresh food – the latest menu additions on the Osbourne kitchen menu reflecting the seasons of Queensland and showcasing local, artisan produce.
Ben brings with him a wealth of knowledge from his previous experiences at Putia Pure Food, Blockhouse, The Mill on Constance, Claret House, Sails Seafood to name a few.
The former Putia Pure Foods Chef is passionate about luxurious and native ingredients with seasonal cuisine focusing on the enjoyment of different flavours and texture profiles. Whilst we love his passion and flare, King brings more than just his culinary creations to the table; his friendliness and eagerness to chat with customers and his fun personality is a welcome addition to the realms of the Osbourne kitchen. So we took a few minutes to sit down with Head Chef Ben King and chat all things new menu…
When asked for his favourite dish off the new autumn menu, he responded with a warm smile “the Pork Cotaletta, as its rustic, inviting and flavoursome; showcasing the best of local produce. This authentic Italian dish matches well with a good Riesling”.
Ben’s pick for crowd favourite? Why the Macaroni Cheese Croquettes with Bacon Jam of course. A modern take on an old classic that will appeal to everyone with its moreish mix of savoury and sweet flavours; this dish is easy to share with friends and goes down well with a beer. The hardest choice lies in which beer to order from over 90 beer taps in venue!
And the question everyone loves to ask a Chef… his favourite cuisine to cook at home. Ben says his love of spices and fresh herbs sees him whipping up modern-gastro Mexican cuisine for his young family at home – the perfect meals for sharing with loved ones using a variety of herbs, spices and fresh produce.
